RECIPE: QUINOA CANNELLINI AND GREENS (With eimele Shine Greens)

Serves 1

Dressing:
½ cup baby spinach leaves
½ cup basil leaves
1 small clove garlic, peeled
1 shallot, trimmed, white part only
2 tablespoon lemon juice
1 tablespoon extra virgin olive oil
2 tablespoons raw cashews
1 tablespoon nutritional yeast
½ cup dill leaves
1 sachet eimele Shine Greens

Salad:
1 cup cooked quinoa
½ cup cooked cannellini beans (opt: chickpeas, butterbeans)
½ medium cucumber, chopped
1 shallot, finely sliced
50g snowpeas, finely sliced
¼ small avocado

To make the dressing, combine all ingredients in a food processor and blitz until creamy. Make the salad by combining quinoa, beans, cucumber and shallot in a bow, add the dressing and mix to combine. Spoon onto a plate, top with sliced snow peas, avocado and a good grind black pepper and enjoy!
